Pomelo & Avocado salad

Today I would like to post a light and healthy salad. The reason is because I am experiencing a short moment of guilt about my constant candy cooking and eating. While this moment lasts I will use the opportunity to present this funny recipe, invented by me.
The main ingredients are pomelo and avocado. I added an egg because I wanted more proteins, but if you don’t like this combination, you can substitute the eggs by shrimp, boiled chicken or crab sticks.
I like very much pomelo, it is one of my favourite fruits. It is (normally) sweet and doesn’t have much juice – the most annoying thing for me when eating citrus fruits. It has also many other benefits, as you can read here:
I also love avocado – it is healthy too and it goes pretty well with so many other products. It is a natural source of healthy fats, so everyone should eat it more often.
The salad is very, very simple and fast (if we don’t count the pomelo peeling, which can be a pretty boring activity sometimes).

Ingredients for 2 servings:
1 pomelo
1 ripe avocado
2 boiled eggs
2 teaspoons honey
2 tbs lemon juice
Tabasco mild sauce (optional)

Peel the pomelo and break it into pieces. Peel the avocado and the eggs and cut them into slices. Combine honey and lemon juice and stir until homogeneous. Combine pomelo, avocado and honey-lemon dressing and mix. Put the egg slices on top of the salad. Optionally sprinkle some Tabasco sauce over the eggs before serving.
