This recipe was created in a moment when I needed urgently to use some products that stayed in my fridge long enough to reach almost their expiration date. Of course the second reason was my hunger for something salty but not too greasy (how strange!)
The recipe is nothing special, in my opinion, but it’s a nice combination of green peas and lukanka.
1 cup whole grain flour
1/2 tea spoon baking soda
1/4 cup milk
3 spoons olive oil
1 spoon olive paste
50 g lukanka (or any other salami)
200 g green peas (boiled or defrosted)
Dry porcini powder
Line a muffin tin with paper cups (around 8)
In a mixing bowl, combine the flour, salt, baking soda and spices and and mix well
In a separate bowl mix together the milk, eggs, olive paste and olive oil. Add this mixture to the dry ingredients and mix well.
Add the green peas and the lukanka, cu
t in small pieces. Stir until absorbed by the dough.
Preheat oven to 180C
Fill 3/4 of the muffin cups with dough and sprinkle some chilli pepper on top.
Bake until a toothpick inserted in the center of a muffin gets out clean.
Cool the muffins on a rack for 20 minutes before serving.
After the muffins I kept my cooking mood and today I made some homemade pasta. Just showing some pictures – this second try was more successful 🙂
