The combination of chocolate, biscuits and cream cheese always makes good results. Following this rule last summer I prepared some nice homemade chocolate bars for a friend’s birthday. I even covered some of them with dark chocolate and made decorations with nice blue marzipan flowers … Unfortunately I didn’t write down the recipe out of laziness. This happened for the first time since I have this blog (and hopefully for the last). I didn’t even make pictures of my creations – neither of the chocolate-covered bars, nor of the rest of the yield, covered only with biscuit cramps (again due to my laziness). I froze the last 20-30 pieces without any clear idea what to do with them.
Suddenly around 2 month later I decided to bring the remaining chocolate bars to the house of a friend, so that we could eat them during our weekly ladies’ parties. The mother of my friend tried them as well and she loved them. She kindly asked if I could make again for her the same sweets. Naturally I promised to do so, but soon I realized that I didn’t remember the exact recipe. All I remembered was chocolate, biscuits and cream cheese…
So eventually one morning I tried to re-create my first recipe by mixing the three main ingredients with some additions. This time the chocolate bars were slightly different from the first ones, not only because of the cocoa biscuits (the previous time I used plain butter biscuits, if I remember correctly). The cream cheese mixture became relatively soft, so in a way the taste was reminding cheesecake.
I also made a nice decoupage jar for my friend’s mom and filled it with the chocolate bars. Of course, there were more pieces left, so I brought them again to one of our regular ladies’ evenings. They were highly appreciated, which means that the recipe was successful.
I recommend everybody with minimum cooking skills to try to prepare these mini chocolate bars. They are very easy to make and the small efforts are definitely worth.
50g butter, softened
200g biscuits, crushed
125g cream cheese
2 tbs powdered sugar
2 tbs orange liquor or 2 teaspoons orange flavor
140g dark chocolate
50g milk chocolate
100ml heavy cream
Combine cream cheese, butter, powdered sugar and liquor and mix well. Add 150g crushed biscuits and whisk until homogeneous. Transfer the mixture to a small rectangular pan, lined with baking paper. Spread it around to form a layer about 1cm thick. Leave the pan in the fridge to cool.
Poor the cream in a bowl and put it over a pan with a shimmering water. Add into the cream the two kinds of chocolate, broken into pieces. When the chocolate is almost melted, remove the bowl from the heat and continue whisking until it melts completely. Pour the chocolate over the biscuit mixture and leave the pan in the fridge for 2-3 hours.
Take the cooled mixture out of the pan by turning it carefully upside down. Take off the baking paper and cut the chocolate bar to small rectangular pieces. Keep the mini chocolate bars in the fridge or in the freezer.
