One of the nicest things on a weekend morning is a hot coffee (or cappuccino, or even tea) with chewy delicious homemade cookies. If you happen to like coconut like me, today I will give you the perfect recipe for coconut chocolate chip cookies.
I made them during one windy Saturday after feeling a sudden “cookie urge”. In fact this day we were invited for a coffee at our neighbours in the apartment below us. The previous day I had received a phone call from them with a complaint that quite often early in the morning our son was making an incredible noise and wasn’t letting them sleep.
I was quite ashamed to admit that this was true. Usually my son wakes up around 6 am (or is waken up by the guy who delivers the baby food). I normally prepare his breakfast right away, then I bring him to the toilet and afterwards I start getting ready for work. In order to give to my better half some extra time of sleep, when I go to the bathroom I leave the toddler for a few minutes at his play box. He usually goes quite wild there and starts throwing toys, screaming loudly, etc. It turned out that the bedroom of our neighbours is under our son’s room…
If I were them, probably I would have been quite upset with this situation. That’s why when we went to their place I immediately started apologising and promising that we would do our best to control him. But our neighbours were quite understanding and even gave a gift to the offender: a cute rabbit. I don’t know if the coconut chocolate chip cookies that I had brought helped but in any case everyone (including my son) was quite impressed with them.
It is true that these cookies are quite impressive: they are pleasantly chewy and you feel the taste of butter, chocolate and coconut in every bite! On top of this they are quick and easy to make – the only challenge is to wait them to stay in the fridge for at least 2 hours before baking. The best would be if you make the dough on Saturday morning (takes 15 minutes or less) and bake the cookies after lunch. That way you will have a nice afternoon snack and a wonderful Sunday morning breakfast… with almost no efforts. That’s a good weekend!
Coconut Chocolate Chip Cookies
(Inspired by Sally’s Baking Addiction)
120 g butter, melted
110 g white sugar
105 g brown sugar
220 g flour
1 tbs cornstarch
1 teaspoon baking powder
2 teaspoons vanilla extract
100 g shredded coconut
1/3 teaspoon salt
100 g chocolate chips (or chocolate broken into small pieces)
In a medium bowl combine flour, cornstarch, baking powder and salt and gently whisk.
In a large bowl combine butter and the two kinds of sugar. Beat until well combined. Add eggs and vanilla and whisk until homogeneous. Slowly add the dry mixture and whisk until a soft dough is formed. Add the shredded coconut and the chocolate chips and stir until just absorbed.
Wrap the dough in cling film and leave it in the fridge for at least 2 hours.
Preheat oven to 160 degrees C. Line 2 large baking pans with baking paper or baking mats.
Make balls out of the dough with your hands and place them on the prepared baking pans at a reasonable distance (they will grow and spread). Bake for 10 to 15 minutes or until the edges of the cookies start becoming golden brown (watch them carefully). Remove from the oven and let cool for 10 minutes on the pan, before transferring them to a wire rack.
