They are very tasty and also convenient for cookie baking with kids.In fact I baked them together with my almost four year old son who was unbelievably enthusiastic! It all started with some ruined plans: I wanted to organise a cookie workshop with my friends and their kids but my son was sick for a long time and wasn’t supposed to meet kids soon after recovering. So the workshop was cancelled but not my intentions to make an incredible amount of cookies and gift them to friends and relatives. That’s how one Saturday morning me and my little boy started baking cookies and making chocolate barks (I will talk about the barks in another post).

Initially I didn’t have any particular cookie recipe in mind so I decided to improvise. Eventually we made two kinds of cookie dough with nearly similar proportions of products. The main difference was that the first dough was made of spelt flour, brown sugar, ginger and cinnamon. This cookie dough had a typical Christmas flavour and nice taste. The second one was great as well: lemon flavour with a hint of orange and wonderful texture.

Baking both kinds of cookies was a bit of a challenge, especially having a small kid around me. However both recipes are very straight forward so there was nothing too complicated with them. We baked the cookies little by little and decorated some of them. We burned one batch and this was the only fail we experienced. The biggest challenge for me was to keep the baked cookies safe from my son who all the time was trying to steal them.

Ginger Spelt Cookies

Ingredients

  • 130 g butter melted
  • 80 g dark brown sugar
  • 80 g granulated sugar
  • 300 g whole grain spelt flour
  • 1 tbs ground flax seeds
  • 20 g corn starch
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground ginger

Instructions

  • In a bowl combine spelt flour, corn starch, flax seeds, baking powder, cinnamon and ginger and stir to blend.
  • In a large mixing bowl combine butter and sugar and whisk them together vigorously for few seconds. Add egg and vanilla extract and whisk again shortly until smooth. Gradually add the dry ingredients, mixing gently with a wooden spoon, until absorbed. A soft dough should be formed. Cover the bowl with a cling film and place it in the fridge for 30-60 minutes.
  • Preheat oven to 180 degrees C (350 degrees F). Line a large baking tin with a sheet of parchment paper.
  • Roll the dough between two sheets of baking paper and cut out cookies. If the dough is too soft and you don’t have patience to cut out cookies, you can make small round pieces with your hands. Arrange the cookies on the prepared tin. Bake on the top rack of the oven for 10 minutes or until the edges start browning.
  • Allow to cool until room temperature on a wire rack.

Lemon Cookies

Ingredients

  • 125 g butter melted
  • 160 g granulated sugar
  • 1 egg
  • 240 g all purpose flour
  • 20 g cornstarch
  • 1 teaspoon baking powder
  • zest from 1 orange
  • zest from 1 lemon
  • 2 teaspoons lemon extract

Instructions

  • In a bowl combine flour, corn starch and baking powder and set aside.
  • In a large bowl whisk together melted butter and sugar, until combined. Add egg, lemon extract and zests and whisk again until smooth. Gradually add the dry ingredients, stirring gently with a wooden spoon, until absorbed. A soft dough should form.
  • Leave the dough covered with cling film for 30-60 minutes in the fridge.
  • Preheat oven to 180 degrees C (350 degrees F). Line a large baking tin with a sheet of parchment paper.
  • Roll and cut out cookies. Arrange them on the baking sheet. Bake for about 10 minutes on the top rack of the oven, or until the edges start browning. Optionally you can decorate the cookies with sprinkles before baking them or with fondant/ royal icing after baking.
