This recipe is not just a chia pudding. It is a kind of yogurt parfait which contains one layer of chia pudding, two layers of vanilla yogurt and two layers of raspberry coulis. All this deliciousness is topped with fresh fruits and walnuts. And the best about this dessert is not just its wonderful taste and flavours: this parfait is low carb and made with nutritious ingredients. It is also easily adaptable so you can make it in a high carb version, still tasty and healthy.
What ingredients do you need
Here is a list of the main ingredients for this recipe. You will find the exact quantities and the preparation steps below the recipe.
- Yogurt: You need thick full fat yogurt for the vanilla yogurt layers. You can use the same one for the chia layer but you would need to dilute it with some water and make it thinner. If you are not on a low carb diet, you can choose yogurt with a lower fat content.
- Chia seeds: full of antioxidants, proteins, Omega-3 fatty acids and more healthy nutrients.
- Raspberries: you can use fresh or frozen fruits for the raspberry coulis, depending on the season.
- Sweetener: for a keto friendly dessert use low carb sweeteners like xylitol, erythritol or stevia. If you are not concerned about carbs, honey or maple syrup would also work perfectly.
- Walnuts and fruits for the topping. All kinds of berries are great for keto. Otherwise you can choose any seasonal fruits that pair well with raspberries and don’t become dark: peaches, nectarines, apricots, citrus fruits, mango, pomegranate…

Ingredients
For the chia pudding:
- 2 tbsp chia seeds
- 2/3 cup/ 170 g greek yogurt, see notes
- 1/3 cup/ 80 ml water
- 1 tbsp xylitol
For the raspberry coulis:
- 1 1/2 cup/ 200 g raspberries, fresh or frozen
- 2 tbsp xylitol
For the vanilla yogurt:
- 1 1/2 cup/ 350 g greek yogurt
- 2 tbsp xylitol
- 1 teaspoon vanilla extract
To garnish:
- walnuts, ground and/ or chopped
- berries by choice
Instructions
Make the Chia Pudding:
- In a bowl combine yogurt and water and mix until smooth. Add xylitol and chia seeds and mix well. Let the mixture stay in the fridge covered for at least 4 hours or overnight.
Make the Raspberry Coulis:
- In a small saucepan over medium heat cook the raspberries and xylitol, mixing continuously until thickened. Break the raspberries with a fork so that the mixture becomes smoother.
- Remove from heat and optionally puree the mixture in a food processor and then pass it through a fine sieve (I didn’t do it because I like my raspberries in chunks but if you dislike the seeds, it is an option). Set aside.
Make the vanilla Yogurt:
- In a bowl combine greek yogurt, vanilla and xylitol and mix very well until smooth.
To assemble:
- Use tall water glasses or small jars to layer the mixtures. Start with the vanilla yogurt: arrange about 1-2 tbsp on the bottom of the glasses. Arrange on top some of the raspberry coulis: as much as to cover the yogurt. Place about 3-4 tbsp of the chia pudding on top. Finish with 1 more layer of raspberry coulis and one of vanilla yogurt. Top with berries and ground or chopped walnuts
Notes
- Yogurt: for the chia pudding if you find yogurt that is not too thick (e.g. Bulgarian yogurt), you won’t need to dissolve it with water. Just mix 1 cup of it with the chia seeds. For the vanilla layer you would need a thick yogurt such as the greek one or strained Bulgarian yogurt.
- Sweetener: Instead of xylitol you can use any other powdered or liquid low carb sweetener by choice. If you are not following a keto diet, you can also use maple syrup or honey.
- When making the layers, consider that in every glass the proportions of the three mixtures should be around 1: 1: 0,5 (pudding: yogurt: raspberry coulis). Be very careful when layering and smooth out every layer carefully with a teaspoon before adding the next. Leave also some space for the fruits on top.
