Why is this recipe good
It is not easy for a cookie to impress me but I have to admit: these maple cookies are incredibly tasty!
The combination of maple syrup and brown sugar makes the dough pleasantly chewy and full of flavour. I couldn’t help but eat several cookies straight out of the oven, when I baked the first batch.
The cookies are great just plain but the frosting brings them to an even higher level! The peanut butter flavour pairs very well with the maple and together they create a new tasty experience. Honestly, I can’t decide if I prefer the maple cookies with or without the frosting, they are great both ways. If you try them out let me know, please, I would be happy to hear others opinions!
What is special about these cookies
Making the cookies is not hard at all, neither is preparing the frosting. They are actually ridiculously. Given the fact that the sandwiched cookies are nice looking, it is definitely worth trying them. And if you are in a fun mood, you can make them like foxes, just following the simple video below. These foxes are very simple and kids friendly: both to eat and to prepare. So eventually I came up with the Cookie Fox idea: funny cookies shaped like simple foxes. They are very easy and perfect for school gatherings, kids birthday parties and any kind of celebrations. They are also great for a bigger kids to make on their own.

Maple cookies with peanut butter frosting
- ½ cup / 110 g butter, softened
- 2 ½ cups / 300 g all-purpose flour
- 1 cup / 200 g brown sugar
- 2 teasp / 10 g baking powder
- ¼ teaspoon salt
- 2 tbsp maple syrup
- 1 egg
- 2 tbsp peanut butter
- 3 tbsp maple syrup
- ¾ cup / 175 g cream cheese
For the cookie foxes:
- Orange food colouring
- Black edible marker/ food colouring
- Alternatively: melted chocolate
- In a medium bowl combine flour, baking powder and salt and stir.
- In a large mixing bowl cream butter and sugar. Add the egg and maple syrup and whisk until homogeneous. Gradually add the dry ingredients and stir until a soft dough is formed.
- Wrap the bowl in cling film and let it stay in the fridge for 30 mins to 2 hours.
- Preheat oven to 340 degres F/ 170 degrees C.
- Roll the dough between two sheets of baking paper and cut the cookies using cookie cutters. Arrange the cookies in a pan covered with baking paper. Bake for about 10 minutes or until the edges start becoming brown. Remove from the oven and let the cookies cool in the pan for 5 minutes before transferring them to a wire rack.
- In a mixing bowl beat together all ingredients until creamy.
- Spread the frosting onto one cookie or pipe it and top with another cookie.
- Keep the sandwiched cookies in airtight container in the fridge. Unfrosted cookies should be kept in airtight container at room temperature.
Cookie foxes (video):
- Before leaving the dough in the fridge, divide it in two parts. One part should be about ⅓ of the other one: colour this one with some orange food colouring. Wrap the two parts separately in cling film and refrigerate them.
- Use a round cookie cutter to cut the two sides of the cookie sandwich. First cut circles from both dough colours. Trim the edges of the orange circles from both sides in order to look like the faces of foxes.
- Bake the cookies and sandwich them with the frosting. Use black food colouring or edible marker to paint the eyes and the nose of the fox. Draw the ears with orange food colouring/ edible marker.
- Alternatively you can paint the fox face with melted chocolate.
- Store the frosted cookies in airtight container in the fridge for about 5 days.
