It’s more than a month now without a new post! Well, I am already back to my work life and my free time is (almost) completely fulfilled by my son. As I’ve already mentioned before, sleeping is not his favourite thing (like a real son of his mother :)), so the time left for myself and my hobbies is really limited.
I must say that going back to work made me happier than I have expected. I didn’t feel any stress because of this, neither it took much to my son to adapt to the new situation. Yes, I definitely have less spare time now but looks like this is fine for the moment.
I haven’t baked anything recently, so today I am presenting here a pasta recipe. It’s one of my favourite pasta recipes and it is not only tasty and healthy but it’s fast and easy. This is the perfect recipe for a working mom to prepare for the whole family after a busy day.
It’s not exactly zucchini season yet but nowadays they are available all year around, so the recipe is good for all seasons.
Ingredients (2-3 servings):
For the zucchini sauté:
3 tbs olive oil
2 medium zucchini, quartered lengthwise and sliced
1 small or ½ big onion, sliced
2-3 cloves garlic, smashed
1 dry chilli pepper, chopped (optional)
ground black pepper to taste
salt to taste
chopped parsley to taste
grated parmesan to taste (optional)
For the pasta:
300 g pasta by choice
2 tbs coarse salt
1 tbs olive oil
In a large non-stick pan, heat olive oil over medium heat. Add garlic and onions and sauté until soft. Add zucchini and chilli and cook them for 1-2 minutes while stirring. Cover the pan with a lid, lower the heat, and let the vegetables cook for 8-10 more minutes, stirring from time to time.
Season with salt, pepper and parsley, stir again and remove the pan from the stove. You can take out the garlic cloves at this point.
Fill a large pot with water and bring it to boil. Add salt and afterwards the pasta. Stir and let boil as many minutes as indicated in the package (taste it few minutes before, just in case). Drain the pasta and pour it back into the pot. Add the zucchini sauté and one tbs of olive oil and mix with a large spoon. Serve immediately, sprinkling each serving with grated parmesan (if desired).
