Sometimes I get worried that I eat too much sweets and that is not good for me. In moments like this I feel the urge to bake something healthy. Last week I had one of these days so I decided to bake cookies with chia seeds. Nice and delicious cookies that my little son can also have without me worrying that he is eating sugar. And so I came up with these Healthy Breakfast Cookies with Chia seeds and Dried Blueberries.
Chia seeds are well known superfood with a number of benefits for your body. It contains antioxidants, Omega 3 fats, fibres and proteins. They are certainly a very good product for your everyday cooking and I am wondering why I don’t use them often enough. Apart from smoothies and puddings, you can also use them in your baking. Yeah, I know that sounds intriguing!
In fact I had a pack of chia seeds in my pantry for quite a long time now. I wasn’t sure what to do with it as I am not a big fan of chia soaked in liquid. In cookies though it is a completely different thing.
But chia is not the only ingredient that makes these cookies good. They also contain coconut oil, whole grain spelt flour and almond meal – all tasty and healthy. And if you don’t have (don’t like) ground almonds you can easily substitute them by ground walnuts. The taste of the cookies will be slightly different but they will be very good this way too.
The dried blueberries are another wonderful compliment to the palate. I also added vanilla flavour because I love it so much and it goes well with everything… Feel free to substitute it with almond extract if you want.
One special thing about these cookies is their sweetness: they are not as sweet as regular desserts. The first bite might even seem a bit tasteless but when you eat the whole cookie, you will realise that its taste is much beyond the sweetness. They are rich in flavours indeed, but don’t contain processed sugar: the only sweetener in this recipe is just 100 g honey.
The Healthy Breakfast Cookies with Chia seeds and Dried Blueberries have a very soft consistency. The dough (or better to say the batter) is very soft as well, so you can’t manipulate it with your hands. You need to make little balls with two teaspoons and arrange them on the baking sheet.
These cookies are great for your kids as they are full of good ingredients. They would also go pretty good with your coffee or tea, though!
Healthy Breakfast Cookies with Chia seeds and Dried Blueberries
- 2 eggs
- 3 tbsp/ 40 g coconut oil
- ⅓ cup/ 100 g honey
- ½ cup/ 50 g almond flour
- 1 cup + 1 tbsp/ 140 g whole grain spelt flour
- ⅓ cup/ 50 g dried blueberries
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 2 tbsp chia seeds
- Preheat oven to 350 degrees F/ 180 degrees C. Line 2 large baking tins with sheets of parchment paper.
- In a bowl combine spelt flour, almond meal and baking powder. Stir to blend and set aside.
- In a small saucepan over low heat combine honey and coconut oil. Stir continuously with a spoon until both ingredients get liquid and the mixture becomes homogeneous. Remove from heat and set aside to cool.
- Transfer the mixture to a large bowl. Add eggs and vanilla and stir until combined. Gradually add the dry ingredients, mixing gently until incorporated in the batter. At the end add the dried blueberries and the chia seeds and stir until absorbed.
- Using two teaspoons make balls from the batter (don’t touch it with hands as it will be very sticky and soft) and place them on the prepared tins. Bake the cookies for 10-15 minutes, depending on their size. Remove from the oven once the edges start becoming brown.
- Let the cookies cool on a wire rack. Keep in airtight containers for up to one week.
