My mom’s birthday was on January 13th. Unfortunately this year I didn’t manage to make a cake for her (I have made so many cakes recently but she didn’t get one – so bad!). I was very sorry about that so in the morning on her birthday I decided to bake some cookies – peanut butter cookies.
I found this recipe before Christmas and I made a double batch. They were so good that we ate them all before I managed to take any pictures! I am not exaggerating at all: even my better half who normally doesn’t eat sweets, this time ate at least 4-5 of them, which is a real recognition from his side. I know that my mom likes peanut butter too, so her birthday was a good occasion for one more batch of these wonderful cookies.
By the way this year I came up with my best ever New Year’s resolution: I decided to look for more opportunities to make people happy. From very simple things like letting someone pass in front of me in the supermarket to more personal ones like gifting something to friends just to make them smile. I realised how happy I feel when I make someone happy so why shouldn’t I take more chances for happiness!
I’ve got a nice new agenda for 2016 in which I will write the happy-making things I have come up with. I am planning also to write there the things in my life which make me feel grateful.
But enough about my resolutions, let’s return to the cookies. They are so fast and easy to make that I managed to bake them while preparing my son’s breakfast (a quite complicated morning ritual, including blending, boiling, feeding, changing nappies, cleaning the kitchen after the breakfast, washing lots of dishes…). The recipe makes about a dozen of cookies, so if you are greedy or expecting guests, better make two batches.

30 g butter
60 g peanut butter
100 g dark brown sugar
2 tbs white sugar for coating
115 g all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
Preheat oven to 180 degrees C. Line a large baking pan with parchment paper.
In a bowl combine flour, baking soda and salt. Set aside.
In a mixing bowl cream butter and peanut butter. Add brown sugar and beat until smooth. Add egg and vanilla and continue beating until well combined.
Gradually add dry ingredients to the mixture and whisk carefully, until a soft dough is formed.
Place white sugar on a plate. Make small bolls out of the dough and roll them in sugar to cover completely. Arrange them on the baking sheet, not too close one to another as they will increase their size during baking.
Bake the cookies for about 10 minutes or until they start getting brown around the edges. Remove from oven and let cool for 10 minutes before transferring them to a wire rack to cool completely.
